In the southern region of Huila, Colombia, Pitalito stands as a key agricultural hub celebrated for its exceptional coffee. Here, José Herman Salazar cultivates coffee on his farm, La Guaca, alongside his wife Marina, daughter Blanca, and son Johan. Originally from Nariño, José Herman moved to Huila after discovering a passion for coffee while working on a friend's farm. In 2001, he purchased La Guaca and began planting coffee, starting with Caturra. Over the years, his dedication to coffee farming evolved, leading him to focus on specialty coffee production around 2015.
Today, La Guaca is home to a distinctive mix of coffee varieties, including 30% Pink Bourbon, 10% Castillo, and 60% Bourbon Aji, a unique variety José Herman developed himself. Bourbon Aji emerged from a few exceptional Caturra trees he noticed on the farm. Recognizing their potential, he cultivated these trees into a nursery, and a sample sent to Caravela revealed a standout flavor profile. This discovery solidified his commitment to cultivating specialty coffee, with Bourbon Aji now earning a place as one of his most celebrated offerings.
